This past September I had the pleasure to go visit my mother’s side of the family in Ukraine. My family and I flew to Ukraine to surprise my babushka (grandmother) for her 80th birthday and it was so much fun! The look on my babushka’s face when she opened the door and saw us standing there was priceless! We only stayed a week in Kyiv (I might have skipped a few days of school for the trip), but we ate the entire time we were there. Food is such an important part of my family tradition and it was so cool to visit family in Ukraine and experience so much food!!! (Other Ukrainian food posts coming in the future…I promise!)

You honestly need only two ingredients to make this cake: waffle wafers and sweetened condensed milk. Our favorite is La Lechera Sweetened Condensed Milk. Here’s the recipe. Are you ready? Thinking caps on. Pens up. One, two, three…
Put one wafer on your plate and spread sweetened condensed milk on it. Make sure you go all the way to the edge of the wafer for maximum tastiness. Put your next wafer on top of that and repeat. Continue doing that until you run out of wafers.
That’s it! You just made a Ukrainian waffle cake. There is one more important step. Once your done putting your layers together, put a piece of wax paper over the top of the cake. Place a cutting board on top of the wax paper then put something heavy on top of the cutting board. Leave the cake under the weight for about an hour…unless you can’t wait that long (which I completely understand). Anyway, leave it on for as long as you can stand. The weight on top of the cake squeezes all the wafer and condensed milk goodness together making a delightful treat that melts in your mouth. For an even prettier presentation, colored wafers add an extra pop of color.
Eat the cake just like that. Top it was blueberries or strawberries. Share with friends and family if you must. Oh, and if you’re not a huge fan of sweetened condensed milk, you can use other things as your filling. Nutella, honey, and jam are all great options.
