Perfect Fluffy​​ Waffles

I kid you not, these are probably the easiest waffles you will ever make from scratch. Not only that, but they are incredibly fluffy and delicious. Perfect for a Sunday morning breakfast to share with family or a midnight meal to have with friends.

These waffles are always my go to. So, it seemed like a no brainer to make them my first breakfast recipe on the blog!

The beauty of them is that you know exactly where all the ingredients are coming from. Unlike the conventional boxed waffle mixes, in which you don’t know what food companies have stuffed in, all the ingredients are foods that you know (and can pronounce). I always get kinda uncertain when I look through the ingredients of food and get stuck on how to pronounce more than half of them.

That issue is completely resolved with this recipe. The only ingredients are self-rising flour, milk, oil, and eggs. ONLY FOUR INGREDIENTS! All of which are well known in the cooking and baking world. It really does not get simpler than that.

The Key to Great Waffles

Fruit

My favorite version of these waffles is with a shredded apple in the batter. It is truly amazing! The apple adds moisture and a fun twist to a basic waffle. So Yummy!!!

Another great fruit is berries. Rather than putting these into the batter like the apple, I just sprinkle some on top. Berries are my go-to topping on waffles because cut back on the harsh sweetness of normal waffles.

Sweetness

These waffles are good by themselves but they go to a whole new level of flavor town when toppings are added. My favorite basics are maple syrup or honey. My favorite unconventional sweet topping is sour cream mixed with sugar. I know this sounds gross to my American readers, but all my Russian readers know how yummy this is! All you do is mix about half a cup of sour cream with sugar until it reaches your desired amount of sweetness. I seriously recommend this with some berries on top. It is to die for!

Over-mixing

The key to a fluffy waffle is NOT over-mixing! I remember making this mistake as a kid then running to my dad and asking why my waffles aren’t as good as his. His response was that I had overmixed the batter. Next time I tried the recipe it came out perfectly! Be sure to only mix until the little clumps of flour mostly disappear.

Perfectly Fluffy Waffles

Ingredients

  • 2 cups self-rising flour
  • 2 eggs
  • 3 tblsp. neutral oil
  • 2 – 2 1/2 cups milk
  • 1 granny smith apple (optional)

Instructions

  1. Combine all ingredients in a bowl and mix until there are little to no clumps of flour left in the batter.
  2. Oil a waffle iron and pour the batter in. Butter each waffle as soon as you take it out of the iron.
  3. Top the waffles with whatever you would like and enjoy with friends and family!
