Scrambled eggs have always been a very boring food for me. Very, in the middle of the road. They were just kinda there on the breakfast table on Sunday mornings. Never my first choice, but also not the worst choice. But, that changes today. This recipe is the perfect scrambled eggs in just 10 minutes!

From a young age, scrambled eggs have been in the lower ranks of egg preparation ways. They always had a bit of a funky taste and texture that never interested my taste buds. I’ve tested a few recipes over the past couple of months trying to make scrambled eggs that I truly enjoy and I never had much success, until now.
These scrambled eggs are really yummy and easy! The perfect combination :)!

How to make them even better

Ok so, the scrambled eggs are already pretty good but, here’s a couple of things that can bump them from “pretty good” to amazing!

Add Cheese!
The addition cheese is a game-changer! Right before I started making these eggs, my Mom recommended that I add some cheese into the eggs before I start cooking. I told myself, “why not? nothing else had worked for this recipe.” Y’all, that one small tweak made all the difference! I used yellow cheddar cheese but I think a mozzarella or parmesan would be a great addition as well. (If you are lactose intolerant, I would recommend going to the grocery store and picking up some dairy-free cheese because you don’t wanna miss out on this part.)

Fully scramble the eggs.
Ok, I know this is a dumb tip but, I swear it is important. Marble scrambled eggs (when the whites and yolks aren’t combined) are not the goal here. So, in a separate bowl, use a whisk and fully beat up the eggs until they are a light yellow color.

Top the eggs with fresh chives or green onions.
Adding a fresh herb topping is such a great wat to spruce up your otherwise pretty boring breakfast. The chives are a bit more forgiving on the breath so, if you are going anywhere today, I recommend cutting up some chives instead. If not, go full out and pop some of the leafy green bits of the green onions.

Don’t Leave Your Stove

This is, seriously, the most important part of this recipe. I have ruined countless eggs just because I looked away to check on my toast, come back to the stove, and find my eggs overdone! The eggs go from not safe to eat to overcooked in the blink of an eye if you’re not carefully watching them. So, set aside Instagram, the news, or the Netflix show you’re binge-watching at the moment and watch your breakfast for a couple of minutes. I promise it will be worth it in the end. 🙂

Now that I’ve told you all you need to know about the world of scrambled eggs, let’s get cooking!

The Best Scrambled Eggs in 10 Minutes

Prep Time: 5 minutes Cook Time: 5 minutes Total Time: 10 minutes

Yield: 2 servings Category: Breakfast Cuisine: American

Ingredients:

  • 4 eggs
  • pinch of salt
  • 1/4 teaspoon garlic powder
  • 1/4 cup shredded cheese
  • 1 tablespoon butter
  • chives or green onions to top it off

Instructions

  1. Whisk 4 eggs until completely combined. Shred in the cheese. (You can do more or less than 1/4 cup depending on how much you like cheese.). Add salt, garlic powder, and other spices of your choice and whisk again.
  2. Melt the butter on medium low heat in a small saucepan. When is completly liquified, pour in the eggs and begin stiring around with a spatula. Let the eggs heat up for a second then begin doing a back and forth motion with your spatula across your pan making sure no part of the eggs gets to cooked. If the eggs aren’t cooking at all,or are making very slow progress, turn up you heat small incriments at a time.
  3. You should begin creating ribbons of scrambled eggs. Once the eggs are on the verge of being ready, mostly solid but still small bits of runnyness, turn off the heat and grab a plate. Separate the eggs onto two plates and topeach one with some more cheese and green onions or chives.
  4. Enjoy! 🙂

Note

  • This is the most random tip ever, but, I recommend using a zester rather than a traditional cheese grater. The zested cheese creates a much better consistency of egg.

Extra Tip: I find it really helps to have a non-stick pan. I’ve used this T-Fal Essentials Frying Pan for years
