I’m gonna be completely honest, this is THE BEST recipe for breakfast tacos you will ever try. The flavors even out perfectly! And it’s really easy to make!
When I was a kid, I would wake up every morning to watch cartoons. Curious George at 8:30, Sonic the Hedgehog at 9, and Dragon Ball Z at 10. My parents would usually turn the tv off by the time Dragon Ball Z was on but, one morning they slept in. After the last kids show, a cooking show came on. My dad came in and watched it with us for a little bit because the food looked interesting. The guy was cooking breakfast tacos but he added an interesting twist. Instead of using all white potato, he mixed in some sweet taters.
We thought it was a pretty interesting idea so that morning we tried it out. And let me tell you, it was incredible!
Since then, my family and I haven’t made breakfast tacos differently. It is seriously so good! The sweet potatoes perfectly juxtapose the saltiness of the rest of the ingredients. I’m so excited that I get to share this recipe with y’all because it’s gonna change your breakfast taco game forever!
Key Ingredients
This recipe is pretty easy, but I want to break down what each ingredient does!
- Sweet potato – This one is pretty obvious lol. But, these add sweetness!! As I mentioned earlier, their sweetness works so well with the salty russet potatoes, cheese, and guac!
- Russet Potatoes – These just serve the purpose of keeping the taco’s flavor balanced. 🙂
- Garlic – Apart from the sweet potatoes, this is the money maker ingredient! Fresh garlic really kicks up the flavor of the whole taco. All I do is peel the skin off then put it through a garlic press.
- Sausage – Believe it or not, the type of sausage you get is really important. My grocery store didn’t have my regular sausage a couple of weeks ago so I tried this same recipe with the new one and it almost ruined the tacos! I strongly recommend only using sausage that you know and love! (My fav is this one.)
- Salsa – These tacos are EVEN better when topped by your favorite salsa. I recommend my fresh homemade blender salsa. 🙂

Sweet Potato Breakfast Taco Recipe
These are the most delicious breakfast taco ever!
Wash, peel, and cube all potatoes. Add oil into a large pan so it covers the whole bottom. On medium-low heat, heat up the oil. Test it with a cube of potato to check if the oil is hot. When the potato sizzles, carefully add in the rest of the potatoes.
Salt the potatoes with 1/2 a teaspoon of salt and mix well. Flip the potatoes occasionally so they don't burn but try to avoid overturning. (Overturning can cause it to become mush.) When there is about 5 minutes of potato cooking left, add the garlic. Once the garlic and potatoes are fully ready, push all the potatoes to one side, tilt the pan, and drain the excess oil out with a spoon.
Halfway through cooking the potatoes, pull out a small frying pan. On medium-high heat, cook the sausage. Begin by flattening it out, then, using a spatula, cut it into small pieces.
When the sausage is ready and the potatoes are still cooking, scramble 6 eggs in a large bowl. Salt then with a quarter teaspoon of salt and whisk again. Add in the cooked sausage into the bowl with scrambled eggs and mix the two together.
Once the potatoes are fully cooked, add the egg-sausage mixture into the frying pan with the potatoes. Cook all of that till the eggs are just about ready.
Heat up some tortillas in the last couple minutes of cooking. The fill the tortillas with the potato mixture and top with salsa, cheese, sour cream, and guac! Enjoy! <3

Notes
- The smaller the potato cubes are, the faster they will cook. Just make sure to not cut the cubes too small or it will become mush while cooking.
- This recipe is super flexible so feel free to change the amount of each potato. If you would like a sweeter taco, just take out 1 or 2 russet potatoes and substitute them with a few more sweet taters.
- It’s better to add the garlic later rather than earlier. If you add it in too early, the garlic will burn and ruin the whole dish. 🙁
