Chicken Quesadillas

These chicken quesadillas are to die for!! They are delicious but, at the same time, incredibly easy to make. Try then tonight for an easy dinner!

Since I was about 10 years old my family and I have been going to the same Mexican restaurant, Garcia’s, in San Marcos, Texas.  That place is truly incredible!! Like seriously so good!  

Every time we go, everyone in my family gets their specific plates.  My dad gets the carnagisada, Mom gets fajitas, brother gets a chimichanga, and I get, you guessed it, quesadillas!!  Their quesadillas are the absolute best!!  They’re cheesy, flavorful, and have a perfect little kick of spice. 

A couple years ago, my family and I moved away from that area of Texas so I haven’t been able to have my favorite quesadillas as much as possible!  And while that’s probably good for my figure, it’s not good for my happiness.😉😝 

So I figured, why not make my own?  

These quesadillas are AMAZING!!  They are exactly like the ones I used to order at that little Mexican restaurant when I was younger.  

What’s the secret to why they’re so good?

These quesadillas are so perfect because of a combination of reasons.

Tortillas 

My favorites are these.  They come raw but this actually makes the cooking process much easier.  While the second side is cooking, you can add in your fillings.  This way your tortilla won’t burn while you’re trying to fill in the insides.

Cheese

Not gonna lie, I feel like cheese solves so many of the world’s issues.  Adding a LOT of mozzarella is the key ingredient in this quesadilla.  Keep in mind when you are putting your cheese into the quesadilla to cover the sides as well as the middle.  If you don’t cheese the sides, the edges run the risk of being dry.😕

Meat

Chicken always has been and always will be the best meat option for quesadillas.  If cooked correctly it’s tender, juicy, and just perfect.  

I make my chicken by dicing it into cubes, seasoning it with garlic powder and salt, and frying it in a little bit of oil on high heat until it’s just ready.  It’s most important to turn the heat off right when the chicken is ready.  (Maybe even when it’s on the verge of being ready.)  That’s really important because if you overcook it, it’s gonna be tough and not very pleasant. 

Pico De Galo

Lastly is the salsa!!  This is when you get to make the quesadilla POP!  I love adding some pico inside or on top because it’s fresh with a little hint of spice.  This recipe is perfect.☺️

I know that recipe sounds pretty simple but it’s super yummy and there’s absolutely no other way to go for a perfect quesadilla.  Ok, I can’t wait any longer!  Let’s get cooking!!!

Chicken Quesadillas Recipe

 2 lbs chicken breast
 ½ tsp garlic powder
 ¾ tsp salt
 8 tortillas
 mozzarella (to taste)
 pico de galo

Dice the chicken breasts, season with salt and garlic powder, and fry on high heat in a little bit of oil until almost ready. (About 160 degrees F.)

Begin cooking 4 tortillas on a large griddle at 350degrees F. When the first side is ready, flip them over, and add in the fillings. On two of the tortillas put chicken, salsa, then cheese. On the other two tortillas just put a little bit of cheese.

When that second side is almost cooked, join together one quesadilla half with the chicken, pico, and cheese, and the other half with just cheese. If necessary, flip that a few times until the tortillas are golden brown and fully cooked.

Serve with guac, sour cream, and/or salsa. Enjoy!

Chicken Quesadillas

Note 

  • The chicken is going to cook a little bit longer even after you turn the heat off.  This is why you should turn off the heat a bit early.
  • Feel free to just cook 2 tortillas at a time if you don’t have a griddle.  Just be sure to cook them in pairs.
  • Makes sure to put cheese around the edges of the tortillas.
