Vanilla Granola Recipe

This vanilla granola recipe is easy, quick, and so delicious!! This granola has those perfect clumps that are like store-bought, but better! 😉

I can’t be the only person that, as a kid, experimented a lot in the kitchen. Maybe even too much? (I’ve had some pretty bad fails haha!🤭😂)

Granola was always one of my favorite things to experiment with. I would throw all types of things into the mix. Cranberries, sunflower seeds, walnuts, you  name it and I’ve probably put it into my granola!  

The granola always ended up tasting pretty good but I never nailed the texture I was going for. The key to perfect granola is having clumps of ingredients rather than separate pieces of nuts or oats.  

Now, after many years of trying, I’ve finally done it!!  I’ve made the perfect granola that actually has big delicious clumps.  Yaaaayy!!  My childhood dreams are finally coming true haha!😂

What’s the Secret To Perfect Granola?

Well, let me tell ya.  

First tip:  Evenly lay out the granola mixture before you bake.  This will make sure that it bakes evenly without getting burnt around the sides or staying too soft around the middle.  

Second Tip: Watch your granola!!  This tip seems sort of self-explanatory but I feel that it’s necessary to add.  Make sure that you watch the granola.  Believe it or not, everyone’s oven bakes at different temperatures.  This means while it took my granola 25 minutes to get golden brown and crunchy, it might take you’re 15 minutes or 35.  Just watch it and make sure it doesn’t burn or end up too soft and fall apart.

Last tip, and the most important one:  After you take it out of the oven, let it cool completely to room temp before you mess with it.  Letting it cool will allow it to form into the clumpy shape that you’re looking for in good granola.  

Once it’s cool, you can break it by hand into bite size pieces.

Vanilla Granola Recipe

 1 cup rolled oats
 2 tbsp coconut oil
 3 tbsp honey
 1 tsp cinnamon
 ½ tbsp vanilla extract

Preheat your oven to 300 degrees and line a baking sheet with parchment paper.

Combine all the ingredients in a bowl until the honey and coconut oil are evenly distributed. Pour the mixture onto the prepared baking sheet and spread it out to an even layer of granola. (Be sure there aren’t any outlying oat pieces because they will burn.)

Bake the granola for 25-30 minutes or until it turns a light golden brown color, flipping the granola around halfway through. (Keep an eye on it so the edges don't burn.) When the granola is ready, pull it out of the oven then let it cool until it reaches room temperature. Then, you can break it into bite-size pieces by hand.

Store in an airtight container for up to 5 days. Enjoy! <3
