This Sweet Potato Black Bean Grain Bowl is the PERFECT meal prep recipe. It’s easy, delicious, and keeps perfectly in the fridge!
I’m just gonna say it, this sweet potato black bean bowl might be the most perfect meal prep dish! And I know, that’s a big statement but I honestly believe it.
In case you don’t believe me here’s my reasoning:
- It is so darn easy! Toss some sweet potatoes into the oven, make some quinoa in a rice cooker, And pop open a can of black beans. Lastly, add in spinach and you got yourself a lunch for the whole week!
- It’s inevitable that, after a few days in the fridge, food isn’t gonna taste as good as it did. The goal with
good meal prepping it to make food that barely changes in taste over time. This grain bowl comes as close as possible to that goal! Even after a few days in the fridge, it tastes fresh and yummy! - Lastly, this bowl is super tasty! Sweet potato and black beans are a match made in heaven!! They are delicious always a crowd pleaser! 😉

Tip For Great Meal Prepping
How you cook the quinoa is a bigger deal than you may think. The best way is in
Second tip is the beans. Don’t use pre-salted. If you do, you can really easily end up over salting the dish! Big no no haha!
Lastly, is to let the quinoa and sweet potatoes cool completely cool before adding in the spinach. If you add it in before those two ingredients come to room temp, the spinach will get slimy and unpleasant over the span of the week. (Even the first time eating if it’s waaay too hot!)
Sweet Potato Black Bean Grain Bowl Recipe
Wash, peel, and cube your sweet potatoes. Place them on a baking sheet and bake for 30 minutes on 400 degrees F or until soft flipping occasionally. Let those chill until they reach room temp.
Put half a cup of quinoa into a rice steamer and cook it on the brown rice setting. When it's ready, turn off the steamer, open the lid, and let the quinoa cool until it reaches almost room temp.
Drain and rinse the black beans. Combine the beans, quinoa, and sweet potato into a bowl and mix. Add in the spinach and salt and mix until evenly combined. Enjoy! <3
