Streusel Filled Coffee Cake

This Streusel Filled Coffee Cake checks all the boxes. It’s easy, moist, and sooo delicious! What more could you ask for in the morning? 😉

I feel that growing up, everyone had that moment when they realized that coffee cake didn’t actually contain any coffee.  And I don’t know about y’all, but that was a pretty life changing moment for me!  I had felt lied to! Haha! 😂 

So why is coffee cake called that?

Eventually I went past that lie and grew to LOVE coffee cake!  What’s not to like?  It’s moist, sweet, delicious, and the perfect addition to a cup of coffee on Sunday morning before church.  

Everybody knows that grandma’s recipes are superior to everybody else’s.  When my grandmother passed away, I was lucky enough to get her box of recipes.  Over her lifetime, she wrote down all her favorite recipes on notecards and kept them in this box.  She kept recipes that ranged from caramel candy or the perfect meatloaf or delicious baked goods. 

Of course, this streusel filled coffee cake recipe comes straight from that box!  It’s so moist and yummy, you just know that it has to be grandma’s recipe.  This recipe has been in my family for many generations but, I believe it’s time to share it with my readers! 😉

What Makes a Great Coffee Cake?

When I get coffee cake at local coffee shops, there are two things that I look for.  

First: Is the moistness of the cake.  If the cake is dry and crumbly, I don’t want it.  I need my cake to be full of moisture!

In this recipe, we chive that by mixing our ingredients differently than usual and incorporating sour cream into the wet ingredients.  

In most cakes, you whip the sugar and butter, add in the eggs one at a time, then alternate mixing in the wet and dry.  Instead of doing that, in this recipe, we mix together the wet and dry separately, then mix them together in a large bowl until the dry ingredients are just combined.  This ensures that the cake is super moist and yummy!!

Second: is the ratio of cake to streusel.  Most coffee cake recipes have a tiny bit in the middle then a little sprinkle on top.  I’m not about that life.    In my books, there can pretty much never be too much streusel.  I like A LOT of it! 😉  This recipe actually has as much streusel as a coffee cake should have. 🙂

Streusel Filled Coffee Cake Recipe

Yields6 Servings

Cake
 1 ½ cups AP flour
 2 tsp baking powder
 ½ tsp salt
 ½ cup sugar
 1 egg
 ¼ cup milk
 ¼ cup sour cream
 ¼ cup melted butter
Streusel
 6 tbsp unsalted butter (melted)
 1 ½ cups all purpose flour
 ½ cup brown sugar
 1 tsp cinnamon

Pre-heat your oven to 400 degrees F. Then grease a loaf tin with butter then line it with parchment.

In a medium-sized bowl, whisk together the flour, salt, baking soda, and sugar. In a separate larger bowl, mix together the egg, milk, sour cream, and melted butter until smooth. Slowly whisk the dry ingredients into the wet until the flour is mostly combined.

In a separate bowl, mix together all the streusel ingredients until it's crumbly.

Pour half the cake batter into the loaf pan, sprinkle half the streusel on top. Repeat that with the second half of batter and streusel then put the loaf to bake. Bake the coffee cake for 25-30 minutes or until a toothpick comes out clean. When it's ready, let the loaf cool until it reaches room temp, then enjoy!! <3
