Sweet Potato Breakfast Tacos

These are the most delicious breakfast taco ever!

Ingredients
 3 sweet potatoes
 6 russet potatoes
 16 oz sausage
 6 eggs
 5 cloves garlic
 ¾ tsp salt

Wash, peel, and cube all potatoes. Add oil into a large pan so it covers the whole bottom. On medium-low heat, heat up the oil. Test it with a cube of potato to check if the oil is hot. When the potato sizzles, carefully add in the rest of the potatoes.

Salt the potatoes with 1/2 a teaspoon of salt and mix well. Flip the potatoes occasionally so they don't burn but try to avoid overturning. (Overturning can cause it to become mush.) When there is about 5 minutes of potato cooking left, add the garlic. Once the garlic and potatoes are fully ready, push all the potatoes to one side, tilt the pan, and drain the excess oil out with a spoon.

Halfway through cooking the potatoes, pull out a small frying pan. On medium-high heat, cook the sausage. Begin by flattening it out, then, using a spatula, cut it into small pieces.

When the sausage is ready and the potatoes are still cooking, scramble 6 eggs in a large bowl. Salt then with a quarter teaspoon of salt and whisk again. Add in the cooked sausage into the bowl with scrambled eggs and mix the two together.

Once the potatoes are fully cooked, add the egg-sausage mixture into the frying pan with the potatoes. Cook all of that till the eggs are just about ready.

Heat up some tortillas in the last couple minutes of cooking. The fill the tortillas with the potato mixture and top with salsa, cheese, sour cream, and guac! Enjoy! <3
