Peanut Noodles

These peanut noodles are simple, creamy, and so delicious!! They are the perfect option for a quick weeknight meal.  

A couple of days ago I posted a recipe for peanut sauce. If you don’t know what it is, it’s a delicious really unique tasting sauce that’s used in some Asian dishes.  After the blog post, a lot of people asked what to do with the sauce. You can of course use it as a dipping sauce for some veggies or as a salad dressing but I want to be a little bit more creative than that.

I decided to make that peanut sauce again and experiment with what to do with it.  After some brainstorming and some scrolling around Pinterest, I thought of the perfect idea! Peanut sauce noodles!!

This way I can combine the sweet/salty and nutty combo that the peanut sauce brings with something more filling and carby.  Like noodles!  

What makes these noodles so good?

So, you might be asking what makes my peanut noodles so special compared to everyone else’s? I’ve noticed that a lot of other bloggers just use noodles and peanut sauce (and sometimes add some chicken). I found that if you stick to just those two or three the sauce and noodles combined a little bit overwhelming. To remedy that issue, I added some stirfried veggies. The veggies are a wonderful pop flavor in freshness. They also cut through some of the very satiating peanut sauce.

What are the right veggies?

I find that the combo of sautéed bell peppers and onions with some fresh chives on top is perfect. Combining sautéed in fresh veggies really brightens the flavor of the whole meal and it ties it together in a perfect bow.

On top of my bowl of pasta, I love adding some chopped roasted peanuts. They add a really lovely crunch and change in texture. If you want, you can also add a little sprinkle of sesame seeds.

Peanut Noodles Recipe

 16 oz linguini or fettuccini
 1 tsp olive oil
 1 bell pepper
 ½ sweet onion
 1 serving peanut sauce (check notes)
 fresh chives
 crushed peanuts

Put a large pot of water to boil and salt heavily. When it begins boiling, put in your linguini or fettucini and cook until al dente. (Check the back of the pasta packaging.) Pull out about a cup of pasta water then, when the noodles are ready, strain them.

While the water is boiling/pasta is cooking, dice the bell pepper into medium cubes and onion into small cubes. Put both into a skillet with a little bit of olive oil. Saute them on high heat mixing occasionally until soft.

When both the veggies and pasta are ready, add the noodles to the pan with the veggies and pour in the peanut sauce. Mix everything together until the sauce completely covers all noodles. (If necessary, add a dash of pasta water to loosen it all up.)

Plate, top with fresh chives and crushed peanuts, and enjoy! <3
