Mushroom Spinach Pasta

This mushroom spinach pasta is SO delicious AND incredibly easy to make! It’s also a wonderful weeknight dinner because it takes only 30 minutes to make!

Mushroom spinach pasta?  I say yes!  A BIG yes! 

Pasta is one of those beautiful foods that makes any day better.  It is delicious, saucy, and so satisfying!  I honestly don’t know how I would live without it.😂

On top of being delicious, is super versatile!  There are  roughly 350 types of pasta in the world and they can all be prepare so many different ways. (Yep, 350!  Isn’t that crazy!)  My favorites include, but aren’t limited to, fettuccine Alfredo, Aglio E Olio, and pesto pasta.  But recently, I discovered sautéed mushroom and spinach pasta.

If you haven’t tried this before, you are missing out!  It hits all the rights flavor notes that a great bowl of pasta should!  The sautéed mushrooms, wilted spinach, and al dente bow ties come together to make the perfect meal.

If that’s not enough to convince you, this pasta dish is also incredibly easy!  Like, less than 10 ingredients + ready in 30 minutes kind of easy.  It’s honestly like a dream come true!

How to make the mushroom spinach pasta saucy?

This is a very important question in my opinion.  Dry bow ties with some sautéed mushrooms and wilted spinach just won’t do!  I’ve found that adding 1 tbsp of olive oil and a splash of pasta water makes the bow ties perfectly saucy without being soup. 😉

How to perfectly sauté mushrooms?

Sautéed mushrooms are really easy to mess up.  If you cook them wrong, instead of being perfectly golden brown, they get this awkward gummy slimy texture.  We don’t want that.😂 No worries though!  I got your back and I’m gonna let you in on the biggest secret!

Step 1:  Slice them thin!  Thick chunks of mushrooms is what leads to rubbery mushrooms.  Flip the mushroom over (stem facing up), then begin slicing away, without cutting yourself of course .😂

Step 2:  High heat.  Mushrooms, like many veggies, have a high water content.  If the mushrooms are cooked on a low heat, they will just stew in their own liquids and become squishy instead of a lil crispy around the edges.  So, turn your heat up high!

Step 3:  Lay them all flat.  Choose a big frying pan and lay all the mushrooms out laying flat.  This will make sure they crisp up and become evenly golden brown.

Mushroom Spinach Pasta Recipe

 6 oz bowtie pasta
 8 oz white mushrooms
 1 cup spinach (packed)
 2 tbsp olive oil
 1 cup pasta water
 1 oz parmesan cheese (plus extra for topping)

Put a medium pot of water to boil and salt it heavily. When it begins boiling put in the bowties to cook for at least 10 minutes or until al dente. Before draining, pull out about 1 cup of pasta water for later.

While the water is heating up/pasta is cooking, thinly slice the mushrooms and put them in a hot skillet with a little drizzle of olive oil (about 1 tbsp). Cook on high heat until they are golden brown and slightly crispy around the edges.

When the mushrooms are ready, add in the spinach and cook for 20-30 seconds. When the spinach is ready, add that mixture into the pot of drained bowties. Add in a drizzle of olive oil, a splash of pasta water, and 1 oz shredded parmesean cheese and mix everything around until combined. Plate and top with some extra parm. Enjoy! <3
