Secret to the Best Grilled Cheese
Mayo! This is the weirdest ingredient ever for grilled cheese but, trust me, it does wonders. Mayo is made up of mostly oil and egg yolks. This means it has a really high fat content…which makes it perfect for grilled cheese. Putting some on the outside instead of butter makes the bread extra crispy and delicious! (yay!:)

Grilled Cheese w/ Caramelized Onion and Dijon Mustard Recipe
In a medium saucepan on medium-high heat, heat up a tablespoon of oil. Then saute 1/2 a diced onion until it caramelizes and reaches a golden brown color. Empty the sauteed onions into a bowl and turn the heat down to medium power.
While the onions are cooking, spread mayo on both sides of all pieces of bread. Put them all on the hot skillet when the onions are finished cooking. When the underside is golden brown, flip over the bread. Spread a little bit of dijon mustard, add some caramelized onion, and spinkle your desired amount of cheese on each piece of bread. When the underside is almost ready, join two pieces of bread togetherand let the cheeses melt together.
Cook both sides of the sandwich until they reach a golden brown color if they haven't already. Then, plate the sandwich, cut into two halves, and serve. Enjoy! <3
