Coconut Chicken Curry

I’m gonna be honest with you, I’m an Indian food beginner.  Before I tried making this recipe I watched a lot of videos about how to make Indian food and the heritage of Indian food.  (And by a lot, I mean A LOT!😂)  after watching all those videos and some challenge Erin I think I finally landed on the perfect coconut chicken curry recipe. 

What makes this recipe so special?

You may be thinking what does this girl have that all the other recipes on the Internet don’t? Well let me tell you!  Instead of using boring store-bought curry paste.  I made my own!  I found that the final product is so much more delicious, fresh, and flavorful! Overall, it’s  completely worth it to make your own curry paste! 

While it may sound a little complicated, I promise you it’s not. Here’s exactly what you need:

  • 1/2 onion 
  • 4 garlic cloves
  • 1/2 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp curry powder
  • 1 1/2 tsp salt
  • 1/4 tsp ginger
  • and a food processor

Quarter your onions, peel your garlic, and measure put all the spices and blend it in a food processor and pulse until smooth.  And that’s it!  In 5 minutes, you have a really delicious curry paste that’s a great base for our curry.  

Next is the chicken.  I keep it short and simple.  I dice a few chicken breasts and sauté them on high heat with a tablespoon of the curry paste until almost cooked.  

Once you’ve made the curry paste and chicken, the rest of the recipe is pretty smooth sailing.  Sauté the curry paste, then add in the coconut milk, greek yogurt, and chicken cubes, cook for 10 minutes, and serve.

If you’re a curry newbie like I was then you might be confused about what to have with your curry?  Here’s my favorite options:

  • Rice – Really easy and delicious!  Perfect combo with any curry
  • Naan –  This one is my favorite!!  Naan is a Indian flatbread that pairs wonderfully with curry.  I love combining rice, curry, and naan to make a really delicious and filling lunch.
  • Plain – I’m gonna be honest, I have had a bowl of this curry without anything!🤭😂  It’s so darn good that I sometimes don’t feel the need to add anything else!:)

Coconut Chicken Curry

 ½ onion
 4 garlic cloves
 ½ tsp turmeric

 2 lbs chicken breast
 ½ cup greek yogurt
 13.50 oz can of unsweetened coconut milk

Roughly chop the onion and garlic and put it in the food processor. Add in the turmuric, cumin, curry powder, salt, and ground ginger and blend until it becomes a paste. Set this curry paste aside.

Dice the chicken breasts into medium sized cubes and put them into large hot pan with about a tablespoon of the curry paste. Fry those pieces of chcken on high heat until they are almost cooked (should be very slightly pink in the center).

In a large pot, saute the curry paste on medium heat until fragrent, about 5-8 minutes. Then add the cooked chicken, coconut milk, and greek yogurt. Turn up the heat and let it simmer for about 10 minutes.
