This cilantro black bean rice is honestly, to die for! On top of being super delicious and easy, it the perfect dupe for chipotle rice!

OK y’all, I’m back at it again with restaurant dupes. (I think this should just be a segment on my blog.😂 What do y’all think?) Anyways, today’s dupe is a banger! It’s seriously so good!!

What is it you ask? Cilantro black bean rice!  

I don’t know if I’m the only one but, I go through phases of loving certain foods.  Sometimes it’s avocado toast, or banana bread, or even canned chicken? (I can’t really explain that last one. It is what it is.😂🤦‍♀️)  Whatever food it is, for that period of time it’s the only food that I want! So when I go to the store I stock up mostly on just that food.

Recently, my food obsession has been this rice. What’s not to love?  It’s fresh, easy to make, and so delicious. My favorite thing about this rice is that it can be used in so many different ways!  

Put it in a tortilla and have a burrito, have it in a bowl with some veggies and guac for some burrito bowl action, or just by itself!  

How do you make it?

When I say this recipe is easy, I mean it!  Here are the (very minimal) steps:

First is to make some rice.  The best way to do this is with a rice steamer.  I’m obsessed with my rice steamer!  It’s one of my most used kitchen appliances.  It cooks rice perfectly every single time!  (If you’re a quinoa fan like me, this is a great investment! Using a rice steamer is my preferred way to cook quinoa haha!)  

Once the rice is cooked, put it into a bowl and add some chopped cilantro, strained black beans, and salt.  Mix that and you’re done!  Just like that!  It told you it was gonna be easy!😉

 2 cups jasmine rice
 2 ½ cups water
 ¾ tsp salt
 15.50 oz can black beans
 ¼ cup cilantro (packed)

Wash the rice then put it into a rice steamer to cook. While it’s cooking, strain and rinse a can of unsalted black beans and chop cilantro to small-medium bits.

When the rice is ready, put it into a bowl and add in the black beans, cilantro, and salt. Mix until the cilantro is evenly distributed. Enjoy in a burrito or on the side of a protein! <3

If your beans are pre-salted, feel free to adjust the salt to taste.
