Chicken and Zucchini Patties

These chicken and zucchini patties are my absolute favorite way to make chicken!  They are tender, juicy, and incredibly delicious!!

Many of my readers/followers are busy people.  Your lives are jam-packed with work, family, and other responsibilities. Those responsibilities usually end up being put before cooking a home-cooked meal.  So you and your family end up eating fast food that isn’t very satiating or healthy.

I don’t think that’s right. I think that even if you’re super busy, a delicious home-cooked dinner should be an easy option!  

This is where meal prep comes in!  If you don’t know what meal prep is it’s exactly what the name sounds like: Preparing meals in advance that are really yummy and, most importantly, super convenient!

This recipe of chicken and zucchini patties is one of my favorites! It’s the perfect food that you can cook on Sunday for you and your family to enjoy throughout the week.

How do I prep the chicken patties throughout the week?

I have a few favorite ways to eat these chicken and zucchini patties.  

First is with a side of veggies. This is a super great dinner option that’s quick, healthy, and easy.  You can roast some cauliflower, make some golden taters (this recipe is really good and easy), or sauté a mix of the pepper and sweet onion and mushrooms.

Second option is with a simple salad. I love breaking up these patties into pieces and having them on top of my salad with a little drizzle of salad dressing.  This is even a great option for lunch if you are in need of that.

The third way is a little out there but bear with me.  Have this on some toast with avocado and a drizzle of olive oil and then a pinch of salt. This toast can go for any meal of the day!  That’s what’s so great about it!  Also, adding carbs from the toast and fats from the avocado makes it super filling for long periods of time.

The last way is a bit boring but I really love it. For a snack, I love these zucchini and chicken patties on their own!  They are super juicy and flavorful that they shine all by themselves!  And this is a super easy grab and eat on the way snack! Haha!  

Honestly, even if you’re not meal prepping, try this recipe out. These chicken and zucchini patties are amazing! They’re one of my favorite ways to make chicken because of how tender and juicy they are.  Every time we take a bite it’s super soft and exploding with flavor!

Chicken and Zucchini Patties

 2 lbs ground chicken
 2 zucchini (shredded on a cheese grater)
 ½ tsp salt
 1 tsp garlic powder
 1 egg
 2 tbsp finely chopped parsley (packed)
 neutral oil

In a large bowl mix together the ground chicken, shredded zucchini, salt, garlic powder parsley, and egg until the zucchini is evenly distributed among the chicken.

Heat a large skillet with a drizzle of a neutral oil. Pull out a bit of chicken (about 3 tbsp), roll it into a ball, flatten it into a pancake that is about a ¼ inch - ½ inch thick, and place it on a large cutting board. Continue doing this with all of the chicken until they are all patties.

When the pan is hot, put in as many patties as will fit comfortably. Sauté them on one side until golden brown, then flip and sauté on the other until they also reach a golden brown color. Continue this with the rest of the patties until you run out. Enjoy! <3
