This is the most delicious burrito bowl recipe you will ever try! It only takes 30 minutes to make AND it is so incredibly good!!
Let me tell you a little bit of how this recipe began.
A couple of weeks ago, my mom and I were home alone while the boys were out fishing and we decided to do something fun for dinner. My mom proposed the idea of a burrito bowl and I thought that sounded good so we got cooking!
I made the guac and my fresh homemade salsa while my mom made the burrito w/ caramelized onion. We sat down to eat tired and hungry from a long day of working on the blog and began eating. We were BLOW WAY by how incredibly delicious the meal was!
Now, you may think to yourself “oh all burrito bowls are equal.” No ma’am! I’ve tried my fair share of less than perfect burrito bowls to let you know that they are most definitely not all equal. I’m gonna tell you all the key ingredients + secrets for the best burrito bowl of your life!
Key Ingredients
The refried beans you use are more important than you would think. I have found that the quality of the beans makes a difference in the final product. I got organic refried beans at the store one time just to try them out and, since then, I’ve never gone back. I don’t really know why but, they are so much more delicious than normal beans!!
The show stopper of this recipe is, of course, the caramelized sweet onions. (Very important that its sweet onions. :)) Begin by peeling an onion then chopping it in half hamburger way (not through the ends). Put one half away into the fridge and chop the other half into 2 pieces, this time through the stem. Then cut it into thin slices. Sauté those bad boys in a little bit of olive oil on medium-high heat until they have softened and reached a nice golden brown color. (Mix occasionally so all onions get evenly cooked.)

Onion: Begin by peeling an onion then chopping it in half hamburger way (not through the ends). Put one half away into the fridge and chop the other half into 2 pieces, this time through the stem. Beans: Empty a can of refried beans into a small pot on medium heat with some water. (Enough water to easily mix around the beans.) While its heating up, add galric powder and a pinch of salt. When it reaches a low simmer, turn off the heat and cover with a lid until the other ingredients are ready.
Toppings: Lastly is the fun part! For the toppings, shred some cheddar cheese, make guac, and mix up homemade salsa in the blender and you're all done!
