Beet Salad w/ Pecans

This delicious beet salad has only 5 ingredients and it is super easy to make. On top of that, the color is incredibly gorgeous!

Growing up, I had it set in my mind that salad has to be green, leafy, and nasty. Ladies and gents, I was wrong!! Salad can be so much more than that. The idea that salad has to be just a bunch of kale in a big bowl is super outdated and I’m gonna show you why in this recipe.

Beets are such an underrated vegetable in America. Often times, they just get pushed aside and looked at as the weird purple veggie. Well, they’re way more than that! In the Ukrainian/Russian culture, beets are used in many dishes. The most well-known dish is borscht, which will be up on the blog soon :). Today’s beet centric dish is this gorgeous salad. It’s incredibly delicious and easy!

This salad looks really untraditional but, the ingredients are actually super simple!

  • Beets – I feel like this ingredient is sort of a given but, you’re gonna need some beets. To cook these, I boil them in a big pot of water until they are soft when punctured with a knife.
  • Mayo – Mayo has the same role in this recipe as it does in something like potato salad. It works to blend together the shredded beets with pecans.
  • Pecans – This is a staple in the salad! Without a crunch factor, the texture is really boring. So, don’t miss skip the pecans! 🙂 (You can also substitute walnuts here if you prefer.)
  • Garlic – Imma be honest. If you’re gonna be talking to someone tomorrow, I’d probably go light on the garlic or just save this recipe for the weekend. If you’re staying home, you ahead and put some fresh garlic in! This gives the salad a delicious kick!
  • Salt – Just because everything needs a little salt. 🙂

Beet Salad Recipe w/ Pecans

 3 beets
 4 cloves garlic
 5 tbsp mayo
 salt
  cup walnuts/pecans

Directions

Put the beets in a big pot filled with water. Boil the beets till they are soft when pierced with a knife. (This takes around 1.5-2 hours depending on the size of the beets.) Drain the beets and let cool for at least 10 minutes.

Shred the beets into a medium-sized bowl with a cheese grater. Put 3 garlic cloves through a garlic press and into the bowl with the beets. Add salt to taste and the mayo. Then mix the salad together.

Chop up some nuts, mix those in, and serve! Enjoy!! <3
