This roasted beef sandwich w/ arugula + avocado is such a delicious and easy lunch! After this, you’re never going back to a cold lunch box sandwiches!

Ok y’all, let’s talk about sandwiches for a sec. I’m generally not a fan of sandwiches. They’re dry, crusty, and the flavors are just lacking. I thought all those things until I tried this sandwich. This sucker is toasty, buttery, and it takes you on a high speed flight to flavor town.

My mom, Elena, introduced me to this gorgeous sandwich. At first, I doubted her recipe. I just figure, there’s nothing that special about the combo of these ingredients common ingredients. But there is! Toasted bread, a quality roast beef, arugula, + some other goodies makes for the perfect easy lunch.

Ok, I’m done talking, let me tell you the secret ingredients! 😉

Secret Ingredients

  • Bread – I don’t mess around when it comes to bread. Today’s special loaf is a mini ciabatta. If you aren’t familiar with this bread, it has a crunch crust all around and a really soft airy inside. It’s super delicious in pretty much any sandwich, especially this one. 😉
  • Meat – Roasted beef is the way to go in this sandwich! It’s just important that you pick a good one from the store. If your grocery store has a deli department where they slice specifically what you ask for, ask one of the workers what their favorite/most popular roast beef is. Usually, this is the best option. 🙂
  • Veggies – This is where the fun begins! The combo of veggies my mom uses is arugula, avocado, and tomato. I’m not a fan of the tomato so I just omit that and the final product still tastes amazing!

This is a really random addition to the recipe but, my mom swears by it! 😉 Every time she makes this sandwich, she pours a glass of tomato juice. And, it sounds kinda weird, but it makes the sandwich even better. The different parts of flavor town from the juice and sandwich work together to make a really great lunch!

Roast Beef + Arugula Sandwich​ Recipe

 1 mini ciabatta loaf
 1 tbsp butter
 dijon mustard
 1 slice baby Swiss cheese
 4 oz roasted beef
 ½ sliced tomato
 ¼ of a avocado
 ¼ cup arugula

Spread a tablespoon of butter on each half of a mini ciabatta loaf and put it into the broiler. When those have almost reached a golden brown color, put a slice of cheese on the bottem half and let it bake until its golden around the edges.

While the bread + cheese are doing their thing, work on your veggies. Slice your tomato and avocado into thin slices and wash and dry your arugula leaves.

When the toast is ready, spread a little bit of dijon mustard on both sides and begin to assemble. My favorite arrangement from bottem to top is: roast beef, tomatoes, arugula, avodaco, and, of course, the top half. Enjoy! <3
