Mushroom Spinach Pasta

 6 oz bowtie pasta
 8 oz white mushrooms
 1 cup spinach (packed)
 2 tbsp olive oil
 1 cup pasta water
 1 oz parmesan cheese (plus extra for topping)

Put a medium pot of water to boil and salt it heavily. When it begins boiling put in the bowties to cook for at least 10 minutes or until al dente. Before draining, pull out about 1 cup of pasta water for later.

While the water is heating up/pasta is cooking, thinly slice the mushrooms and put them in a hot skillet with a little drizzle of olive oil (about 1 tbsp). Cook on high heat until they are golden brown and slightly crispy around the edges.

When the mushrooms are ready, add in the spinach and cook for 20-30 seconds. When the spinach is ready, add that mixture into the pot of drained bowties. Add in a drizzle of olive oil, a splash of pasta water, and 1 oz shredded parmesean cheese and mix everything around until combined. Plate and top with some extra parm. Enjoy! <3
