Perfectly Tender Pork Loin

The recipe for this perfectly tender pork loin is delicious every single time! I am OBSESSED with this recipe and you will be too if you try it out!

Meat is a difficult thing.  Especially pork.  I really love it but at the same time I always struggle when cooking it. If I cook it for too long it’s tough and uncomfortable to eat but if I cook it for not a long enough time it’s raw, obviously😂. 

That’s why I love this recipe so much! It’s the best way to cook pork perfectly every single time.  If you follow the directions below you’ll never have dry pork loins again. And I know that’s a big statement, but it’s true!😁🤭

I’ve been eating these pork loins for as long as I can remember there. They are a classic Ukrainian dish that my mom has been making my family and I for years.  As I grew up and began spending more time in the kitchen, I started learning my mom’s recipe.  All her secrets are written out in the blog post so enjoy!

What makes these pork patties so delicious?

There are a few key things that I do to make these extra delicious.  

Cut of meat:  In this recipe, I stick to using pork loin.  I love it because it’s easy to work with, pretty inexpensive, and, of course, really yummy!  

First in the cooking process is to beat the meat.  That sounds a little weird but trust me! When you beat the meat with the meat tenderizer it softens the pork and it makes it much more juicy.  After beating, cut each piece of meat in half to make the frying process easier.

Second thing is seasoning.  We keep it simple here.  Salt.  Sprinkle some on both sides of that meat.  (Beating the pork also allows the salt to soak into the pork more.) That’s it!  And it’s perfect every single time!

Next is the breading process.  I first coat the meat in the flour and then dip it in some eggs.  This way when you fry the meat it has a delicious golden outer edge.

Now comes the fun part of frying!  I feel like frying foods has a stigma of being difficult but no worries.  Frying the meat is less intimidating than it seems.  After making the breading around the pork loin, put it into a skillet with a little bit of oil on medium heat.  Once one side has reached a golden brown color, flop it and cook the other side until it reaches that same color.  

While the pork is cooking put ½ a sliced onion and 2ish tablespoons on the bottom of a pot.  As the pork pieces are being cooked, begin to be cooked, put them into the pot with the onion and butter.  When they are all in the pot, add another 2 tbsp butter and ¼ cup water.  Cover with a lid and turn the heat to low and steam the meat for about 10 minutes.  

This recipe is delicious with mashed potatoes or my smashed golden potatoes recipe and some pickles on the side.

 4 eggs
 ½ cup AP flour
 ½ sliced onion
 2.50 lbs pork loin
 drizzle of oil (for then pan)
 ¼ cup water
 4 tbsp butter (split in 2)

On a large cutting board being by beating your pork loins until they are about a quarter-inch thick. Salt them on both sides then set aside. Beat 4 eggs in a medium-sized bowl and sprinkle ½ a cup flour on a flat plate.

Coat the pork loin in the flour then dip it in the beat eggs. Put it into a pan on medium heat with a little bit of oil. Cook one side of the pork until it’s golden brown, flip, and cook the intern side until it also reaches a golden brown color. Repeat this step with all the pork pieces.
